Ingredients

  • 2 lbs ground beef

  • 1 onion diced

  • 1 jalapeno diced

  • 1 packet of Tony Chachere’s Chili Seasoning Mix

  • 1 14.5 oz can diced petite tomatoes

  • 1 can pinto beans

  • 2 boxes Mexican corn bread

  • 1 can sweet corn

  • 1 cup shredded cheese

  • 2 tbsp sugar

  • 4 tbsp butter

  • Milk

  • Eggs

  • Cilantro

  • Green Onion

  • Clear

Directions

  1. Brown ground beef, onion, and jalapeño in a skillet. Drain fat.
  2. Add in tomatoes, beans, chili seasoning, and water according to instructions on box. Stir to combine.
  3. Bring to a boil, reduce heat and simmer for at least 20 minutes.
  4. While the chili continues to cook, prepare corn bread.
  5. Combine cornbread box in a bowl with sweet corn, cheese, and sugar. Add in milk andeggs according to instructions on the box.
  6. Preheat the oven to 400 degrees.
  7. Add melted butter to the casserole dish. Pour chili over the top, followed by the cornbread mixture.
  8. Bake for 20 minutes. Garnish with cilantro and green onions. Enjoy!
